PÉTRIN À BRAS PLONGEANTS


Le pétrin à deux bras, dont le mouvement esthétique rappelle le pétrissage manuel, est conçu pour un pétrissage doux et efficace. Le bras gauche, équipé d’une boucle, remonte la pâte, tandis que le bras droit, doté d’un fraseur à deux pointes, étire la pâte. Ce processus se fait essentiellement par extension et cisaillement, évitant l’échauffement de la pâte. Ces pétrins modernes respectent les normes d’hygiène et de sécurité actuelles et sont équipés d'un tableau de commande électronique, de double vitesse, et de cuves et bras en inox massif.
